The colour’s so pale, it’s hard to imagine the power, intensity and sheer presence that such a pretty wine can have. Very complex aromatics of tangy red fruits, cool hedge fruits, Chinese five spice, blood orange, savoury spice and wild herbs. Deep and concentrated, the tannins, skin and bunch are present to swirl, taste and feel. There’s a firmness to them and a slipperiness as well, al dente. We tried this over the course of several hours, and the whole bunches receded somewhat, while the fruit became sweeter, the savoury elements drier and the general flow smooth as silk. A remarkable wine, almost a challenge to the drinker at this stage and it begs time in your cellar. There is so much more to come. What a wine. 100 dozen made. Waters Wine Co
Intense florals, baking spices, strawberry, raspberry, creaming soda, rhubarb, plum, sandalwood, blood orange, granite and smokey reduction. Silky and sappy. Elevated acidity really pushes the wine to the outer limits. Great bow like width and movement. Gamey notes, Serrano, woody mushrooms, sous bois and blackberry. Firm tannins, long and mineral. The wine is called Apollo, and when you taste it, it takes you to the stars. This wine is so good, and so distinct, that it’s tempting to say that it redefines what is possible with pinot noir and the Adelaide Hills. It’s complex. It’s structured. It’s Italianate. It’s varietal. And it’s itself. It brings smoked, ripe, berried fruit to the table and then layers woodsy herbs, gunmetal, twigs and peppers throughout.
