“Mid purple, the nose offers a leaner raspberry style, and then a little more flesh behind, a darker fruit before the white pepper kicks in, with a little fresh but not vegetal bitterness to finish.” Jasper Morris MW, Inside Burgundy 87-90 Points

Paul Pillot is a producer of its generation, producing wines of great clarity, purity and tension. The quality of his holdings in Chassagne is eye watering and the wines, funnily enough, are mouth watering. 13 hectares is quite a significant domaine, and yet they have become so adored by the restaurant trade in particular, that allocations are smaller than ever.
The style of the wines has evolved over the last twenty years or so, reflecting regional trends towards shorter elevage, a diminution of new oak and earlier picking. The domaine’s reputation rests on its whites and yet their pinots have come a very long way indeed. Like the whites, they certainly occupy the contemporary ground, with virtually no new oak, short aging, high percentages of whole bunches and lighter colours. Freshness, energy, clarity and tension are what the estate aims for and for all their vibrancy, there is an incredible sense of effortless power and ethereal grace.

A difficult hot year 2023, it’s had to believe that such as pure, supple and translucent wine could be forged from such difficulty. Medium bodied, with the black and hedge fruits mashed with licorice, mace, fennel, pink peppercorns and […]

All the vines are at the northern end of the appellation, which dictates the finesse. The vineyards include: En Motrot, situated between the church and Château de Gevrey-Chambertin, close to Clos Saint-Jacques; Au Vellé, […]
Add to cart Producer: Denis MortetLight in colour, with scents of an English Summer. Sweet strawberry, raspberry and cherry, with star anise, clove and fennel seeds. Silky, sappy, supple and mineral, very gentle mouthfeel, but totally immersing the palate in flavour. Beautifully toned wine, the fruit so fresh and pure. But it’s the lightness I love, the gentleness and ballerina […]
