Very dark impenetrable colour, and a very Heathcote nose. Blackberry, dark cherry, glace cherry, chocolate, ferrous notes, fresh compost and savoury spices. Luscious palate, rich and full bodied with an enveloping volume of fruit, fresh cinnamon, vanilla and cigar box. Rich, ripe chocolatey tannins focus the wine’s sheer density and a seam of acid completes a picture of “controlled full on”. A wonderful expressions of a traditional Australian wine style. Emily and Nick’s own label, named after 14th century theologian William of Occam’s philosophy of “less is more”, with a stylised “ < less than” symbol on the label, very applicable to our minimal intervention winemaking methodology. Once again we have sourced grapes from Colbinabbin, mid-north of the Heathcote region and blended together with a parcel of Heathcote fruit from further south west. Going forward with the Occam’s label we aim for continuity with these vineyards into the future. We closely watched ripening and harvested early to capture a great fresh feel.
