I don’t normally like fizzes aged for long periods on lees but this, disgorged after five years, seems to have hit a sweet spot. Still very primary and super intense with pastry notes, butter, apple, almond cream, lavender, honey, grapefruit, lemon, lime, white peach and cinnamon.
