I love dry white Bordeaux, but alas the sort that I like, I can’t afford. To honest, I don’t care where it comes from and Chateau du Cedre are displaying the versatility of their terrior with these wine styles and varietals. Very classic aromatics of white flowers, Anzac biscuit, mirabelle plum, white an yellow peach, lime and persimmon. Slightly textured and fleshy, it is however tightly wound, with nuances of ginger and cream, tensioned by mouth watering acidity. Made from 50% Sauvignon Blanc, 40% Semillon and 10% Muscadelle. From vines grown on the limestone scree just below the cliffs where there is a very high percentage of limestone in the soil from vines aged 25 years old. Whole bunch pressed and fermented slowly with natural yeast with nothing added during vinification and ageing. Aged for 8 months on fine lees in a mix of 500 litre barrels and stainless steel tank with just a very light dose of SO2 before bottling. Dry fresh and richly textured finishing at 13 % alc. An outstanding white blend of great texture and complexity with a delicacy and interest that keeps you coming back for more.
